Tossed Puffed Rice/Mandakki Susla/Uggani

A recipe from North Karnataka Mandakki Susla or uggani is very popular as a snack along with chilli bhajji also known as mirapakai bhajji. It can be eaten as such or accompanied by curd. A very tasty snack for an evening tea or a brunch at 11 or 11-30 in the morning. My way of making this simple tossed puffed rice recipe is here.

Ingredients:
Aralu/Mandakki/Puffed Rice- 4 cups washed and soaked in water for 3-4 mins
Tomatoes-1 chopped
Onion-1 big finely chopped
Turmeric powder/Haldi-1/2 tsp
Coriander powder-2 tsp
Garam masala-1 tsp
Mustard seeds-1 tsp
Udad dal/Skinned split black gram- 2 tsp
Cumin seeds/Jeera-1/2 tsp
Green chillies-2 chopped
Salt to taste
Oil-1 tbsp
Curry leaves-2 sprigs
Lime juice-1 tsp

Recipe:
Drain the soaked puffed rice by squeezing the extra moisture in them and transfer them to a separate plate.
In a wok add oil,when hot add mustard seeds,udad dal,jeera and saute till they splatter.
Once they splatter add green chillies,oinions and saute well.
When onions turn translucent add haldi and saute well.
Now add coriander powder and then tomataoes and saute.
Once tomatoes turn bit tender add garam masala,salt and saute.
Add the drained puffed rice to it and saute on a medium to low flame till all masalas get well coated to the puffed rice .
Check for salt.If needed you could even add at this stage and mix well.
Finally add lime juice and fresh curry leaves and mix well.
Mandakki susla is ready to serve.
